Welcome to Delightful Keto. I have been following some variation of a low-carb/ketogenic diet for about 2.5 years now. This blog is a way for me to share the recipes I try, whether it be a modified version or something I dream up myself.

Keto has absolutely given me my life back. Eating the recommended American diet (whole grains, low fat) left me 20 pounds overweight with high blood sugar, inescapable fatigue, joint inflammation, headaches, acne, and depression. I followed the rules: low fat, whole grains, tons of fruits and vegetables. I also followed my sugar addiction basically anywhere. So why did I feel worse at this point in my life than any other time? After a friend shared some of the evidence and led by example, I started doing some of my own research. I started eating a keto diet in May 2012, and almost immediately started losing weight and having more energy. 2 years later, I am down 16 pounds and feeling more alive than I have in my entire life. I feel good in my own skin. Headaches are not an issue. I would say one of the greatest benefits for me has been the mental clarity. The anxiety and depression are much less severe and most days I feel calm and centered. Eat sugar, and they come back full force. I am not perfect, and I still struggle every day. But this lifestyle change teaches me that I can conquer anything I set my mind to, in every area of my life.

And believing in yourself, loving your body by nourishing it with healthy food, and being your own health advocate are everything.
